Chicken Cauliflower Fried Rice
Ingredients
- 2 eggs, scrambled
- 1 tablespoon coconut oil
- ¼ onion, minced
- 2 cloves garlic, minced
- ¼-inch piece fresh ginger, minced
- 2 carrots, diced
- 2 scallions, bias cut/diagonal
- ½ cup frozen peas, thawed
- 2 ½ cups cauliflower rice (approximately half a head)
- 3 tablespoons soy sauce
- 1 teaspoon toasted sesame oil
- Fresh cracked pepper to taste
- 1 cup rotisserie chicken, chopped
Directions
Scramble the eggs in a separate pan and set aside. Heat up coconut oil in pan and sauté onions, garlic, and ginger until soft. Add carrots, scallions, and peas and cook until carrots are al dente. Add cauliflower rice and cook until “rice” is al dente. Add soy sauce, sesame oil, pepper, chicken, and egg. Continue to cook while stirring to combine the ingredients and everything is heated through. Add salt at the end if desired (the soy sauce usually adds enough saltiness). Yields approximately 4 cups.
