Roasted Garlic Bean Dip
Ingredients
- 3 cloves garlic, peeled
- 2 15-ounce cans cannellini beans, drained
- 2 teaspoons Greek seasoning
- 1 teaspoon grated lemon zest
- 1 tablespoon fresh lemon juice
- 2 ½ tablespoons olive oil
- ¼ cup crumbled feta cheese
- ½ teaspoon oregano
Directions
Wrap garlic cloves in tin foil and roast in the oven at 375°F for 30 minutes. In a food processor, add cannellini beans, Greek seasoning, lemon zest, and lemon juice and blend until well combined. Slowly drizzle in 1½ tablespoons olive oil until smooth and creamy. Pour dip into a medium bowl and drizzle with remaining olive oil. Top with crumbled feta cheese and oregano. Serve with pita chips or sliced vegetables.
