Southwest Potato Leek Hash

Ingredients

  • 3 slices bacon, diced
  • 3-4 potatoes (about 1 lb), diced
  • ½ red pepper, diced
  • 2 cups leeks, sliced thin and rinsed
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon garlic salt
  • ¼ teaspoon oregano
  • 1 teaspoon smoked paprika
  • ¼ teaspoon chili powder
  • Pepper to taste
  • Cilantro (for garnish)

Directions

In a large skillet, sauté bacon until crispy. Remove bacon and set aside while leaving fat in pan. Add potatoes and peppers. Cook for about 5 minutes. Add leeks, garlic, salt, garlic salt, oregano, smoked paprika, chili powder, and pepper. Continue to cook until potatoes are tender. Stir in bacon. Garnish with fresh cilantro.
