Watermelon Gazpacho

Ingredients

  • ¼ teaspoon salt
  • 1 tablespoon lime juice
  • 1 cup yellow tomatoes
  • ½ cucumber, chopped
  • ¼ red or white onion, chopped
  • ½ yellow pepper, chopped
  • 1 clove garlic
  • 1 cup fresh watermelon
  • 1 tablespoon sherry vinegar
  • 2 tablespoons olive oil

Directions

Place all ingredients in a high-speed blender, except olive oil. Blend on high until all ingredients are well combined. Place blender on low and slowly drizzle in olive oil. Pour mixture into individual bowls. Garnish with fresh mint, chopped yellow pepper, and scallions, for topping (if desired). Makes 2 ½ cups.
