Zucchini Noodles with Tomatoes and Olives

Ingredients

  • 2-3 zucchinis
  • ¼ cup olive oil
  • 2 cloves garlic, thinly sliced
  • 2 cups grape tomatoes, cut into quarters
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup Kalamata olives, pitted and sliced
  • ¼ cup fresh basil
  • ¼ cup grated Parmesan

Directions

Use a spiralizer to make zucchini noodles (or slice with julienne slicer) and set aside. In a large skillet, heat olive oil over medium heat. Add garlic and cook, stirring until just golden (about 1 minute). Add grape tomatoes, salt, and pepper. Reduce heat to medium-low and cook, stirring until tomato juices run (about 5 minutes). Add olives and basil. Pour mixture from skillet into a bowl and set aside. Sauté zucchini noodles in the same pan until tender. Add sauce back to the pan and stir until combined. Top with Parmesan and serve.
